Cup Characteristics: This mild cup does carry some light citrus notes and roasted nutty aromas can be found in the dry grounds.
Guatemalan Huehuetenango
Region: Huehuetenango
Process: Fully washed, machine dried
Elevation: 1700-2000m
Cupping Characteristics: One of our favorite Huehue’s of recent memory. This graciously acidic coffee is accompanied by chocolatey lemon mouth feel and a sweet nutty scent.
Organic Kenya AA
Region: Embu
Process: Fully Washed, Dried on African Beds
Elevation: 1800-2200m
Cup Characteristics: Fascinatingly citrus notes brighten the pallet and give way to a light body and smooth lemon grapefruit finish.
Sumatra Aceh Gayo
Region: Gayo Highlands
Process: Fully Washed
Elevation: 1100-1500m
Cupping Descriptions: This fruity sweet Gayo bodes some surprising brightness coupled with the desired heavy mouth feel and provides an ever so slight dry foresty/spice finish.
Ambex
Pro’s: It’s brand new and I can roast up to 5 lbs. The machine really is slick, roasts are always even. Using digital temperature settings are way more convenient.
Cons: The cooling tray does a great job of cooling, but it’s challenging to get roasted coffee out of tray. Challenging to keep temps where they need to be if roasting outside.
Burns 2 Barrel
Pros: The heat is consistent and the amounts are perfect enough for us to cup it and have some left over to play with some blending ideas. Must rely on actual senses to roast to desired profile.
Cons: It has no thermometer anywhere. Cooling trays are slow. It’s electric.
Burns 4 Barrel
Pros: It has 4 barrels, drastically cutting down the time it takes to roast. Runs on propane.
Cons: It’s taken a beating and we’ve had to replace a few parts on it.
Probat
Pros: Ease of use and consistent roast profiles. Holds temperatures nicely.
Cons: Only roast 6 ounces at a time. In fairness it is a sample roaster, but 6 ounces is only enough to cup, not to play with blending possibilities.
Ethiopian Yirgacheffe
Region: Yirgacheffe
Process: Fully Washed
Elevation: 1700-2000m
Cup Characteristics: The sweet floral and honey dry aroma is truly mouthwatering and provides this intrinsically balanced coffee a glimpse of what is expected in the cup.
